Important information
All of our cakes are securely boxed and will be refrigerated (if required) up until collection time. Swiss meringue buttercream cakes are far more delicate than fondant cakes due to the butter contained in their icing. Fresh flowers (if using) will be placed in the cake as close to collection time so they stay as fresh as possible.
Transport
Always hold your cake upright and level to ensure your decorations don't fall off or get damaged. When transporting a cake in the car if possible bring a friend or relative to hold the cake on their lap. If not possible, place the box on the floor of the front passenger side and try to avoid bumpy roads or stopping suddenly. Put the air conditioning on if your car is even slightly warm and try to keep the sun off the box. Hot weather and buttercream don't mix. If the day is going to be extremely warm we will contact you to arrange an earlier collection time. Try not to be in the car any longer than 30 mins in warm weather.
Storage
If the cake is not to be served for at least two hours or more, then put the cake in fridge (leave it in its box so fridge odors are not picked up by the buttercream). If the box won't fit in the fridge then store it in a cool, dark room out of harms way.
Up to two hours the cake can be left out at room temperature (in its box) as long as the temperature is not greater than 20 C. Keep an eye on the cake and if the buttercream looks as if it is getting too soft then put it in the fridge if possible or put on the air conditioning.
Cutting and Serving
A guide on how to cut your cake for the number of portions you require can be provided when you collect your cake or upon delivery.
For the best texture and flavour we recommend removing your cake from the fridge 60 minutes before serving (if it has not been stored at room temperature as noted above). If the weather is very hot, make sure the room is airconditioned.
Remove all toppers and flowers before cutting the cake into the desired number of portions as specified in your quote. You may find it easier to place a cutting board next to the cake so that you have somewhere to place each long slice before cutting it into smaller portions.
Once you have finished cutting please do a quick temperature check of the cake. Bit cold? Not yet room temperature? Cover loosely with plastic wrap so it won't dry out and leave it for 10-15 mins before checking again (you could always taste a few offcuts to make sure it's at its best before you serve it.) Enjoy!
